Fluffy Butter Cream Cheese Frosting

Fluffy Butter/Cream Cheese Frosting RecipeFluffy Butter/Cream Cheese Frosting IngredientsMy son loves red velvet cake, but he’s not too wild about the usual rich cream cheese frosting.  When he was in first grade, he requested that I send red velvet cupcakes to school for his birthday.  I wasn’t too sure about first-graders liking red velvet, but I figured I would try it out on them.  So I concocted a fluffy butter-cream style cream cheese frosting for the cupcakes to hopefully satisfy such young palates.  Mrs. Pope was sure to let us know it was the most clever of ideas and the most well-eaten cupcakes ever brought to her class.  There was no fussing about “I want white”, or “I want chocolate”.  Everyone had the same cupcake, and all the kids loved them.  I don’t remember what kind of cake I made–most likely straight from a boxed mix.  But here is the fussed-over frosting recipe.

Fluffy Butter Cream Cheese Frosting


  • 8-oz. package cream cheese, softened
  • 1 stick butter, softened
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon pure almond extract
  • 1 1/2 16 oz. packages confectioner’s (powdered) sugar
  • Enough milk to make the icing smooth–just a couple of tablespoons or so


  1. Cream butter and cream cheese with hand-mixer.
  2. Add other ingredients and mix well.
  3. Thin with milk carefully as needed, and beat until fluffy and smooth.
